    Cucumber Mango Salad

    Ingredients

    1 cucumber, spiraled or julienned
    1/3 cup freshly chopped mango
    2 tbsp dried fruit (raisin, berries, etc.)
    2 tbsp nuts or seeds of choice
    1/4 cup cooked grains (quinoa, brown rice, millet, etc.)
    1/2 - 1 tsp grated ginger
    Pepper to taste
    1-2 fresh basil leaves
    2-3 tsp balsamic vinegar or glaze
    1-2 tsp olive oil

    Instructions

    Toss ingredients together in a bowl and enjoy!
