Ingredients

  • ½ pound sushi grade tuna
  • 1 medium mango
  • 2 tablespoons thinly sliced white onions
  • ¼ cup chopped scallions
  • 1 tablespoon reduced sodium soy sauce
  • ½ teaspoon sesame oil
  • ¼ teaspoon sriracha
  • ½ medium cucumber
  • ½ small jalapeño
  • 1 cup cooked brown rice
  • 2 tablespoons chopped macadamia nuts
  • 1 teaspoon toasted sesame seeds
  • ½ of a lime
  • 1 small avocado

Instructions

  1. In a medium bowl, combine tuna with onion, scallions, soy sauce, sesame oil and sriracha.
  2. Gently toss to combine and set aside.
  3. Cut tuna into 3/4 -inch cubes.
  4. Peel, seed and cube the mango and avocado. Thinly slice cucumber and jalapeño. Chop scallions.
  5. In a bowl, layer ½ the rice and begin assembling your poke bowl with ½ the tuna, mango, avocado, cucumber, jalapeño and scallions.
  6. Top with nuts, sesame seeds and serve with lime wedges.
