Mango All Spice Brined Pasture Prime Pork, Mango Arbol BBQ, Pickled Mango, Tostone
Ingredients
Brine
- 1 gallon cidar vin
- 2 cups sugar
- 1 cup brown sugar
- 1 tbsp red pepper
- 1 whole raw ham (cut into sections)
- 2 cups salt
- 1/4 cup allspice
Slaw
- 4 heads of shredded cabbage
- 2 julienne red onions
- 2 cups cider vinegar
- 2 tbsp water
- 2 julienne red peppers
- 6 julienne mangos
- 1 tbsp sugar
Mango BBQ
- 12 pureed mango
- 4 arbol chilis
- pinch of salt
- 12 plantains sliced, fried, flatten, fried
- 1 cup vinegar
- 1 cup sugar
- Tostones

Instructions
- Soak pork in brine for 24 hours then rinse.
- Bake at 300 degrees for 12 hours
- Shred Pork
- Smear Mango BBQ on plate.
- Place tostone on top of smear.
- Place pork on top of tostone.
- Place Slaw on top of pork
