Mango Veggie Roll Ups
Ingredients
- 1/3 cup whipped cream cheese
- 2 burrito sized flour tortillas
- 1 medium ripe mango, peeled, pitted and cut into 1/2-inch thick strips
- 2 green onions (green tops only)
- 1/2 small carrot
- 1 cup each: thin julienne strips jicama and red bell pepper

Instructions
Spread cream cheese over tortillas and place mango, green onion, carrot, jicima, and bell pepper over 2/3 surface.
Roll up tightly.
